Ingredients
- 64 oz broth (beef, chicken, veg)
- 1 cinnamon stick
- 2 star anise
- ginger
- 1/2 onion
- bok choy
- protein (beef, chicken, tofu, meatballs)
- noodles (udon, vermicelli, etc)
Garnish
- 2 t fish sauce
- Bean sprouts
- Green onions
- Jalapenos
Equipment
- Cutting board
- Sharp knife
- 4 qt pot (or 2 to speed things up)
Prep
- Peel the ginger and cut it in half
- Cook the noodles (this can be done while the broth is simmering, if you are using 2 pots)
- Chop the veg
Cook
- Simmer the broth for at least 30 min
- Add noodles to bowls
- Ladle hot broth into bowls
- Garnish (or provide self-serve garnish)
- Serve
